The grapes selected for this product are of the most prestigious section of the vineyards surrounding the Sabiona Monastery, known as the “Acropolis of the Tyrol”. The intensity of the selection along with the carefully controlled aspects of production and the delicate aging in acacia wood casks create a wine that is clearly unmistakable to discerning wine palates.
Color: a pale yellow with green tints to it in the glass
Bouquet: a fruity aroma with peach and green apple being discernible, along with elegant mineral tones.
Taste: Mineral and apple tastes mingle to create a long crisp finish.
Serve: at 10° -12° C or 50˚ to 54˚ F
Food Pairing: white fish, asparagus, white meats or as an aperitif.
Production Area: Grown in the mid-section of the Isarco Valley
Vineyard: at 550 - 650 meters or 1800 to 2100 ft elevation above sea level
Soil: Gravelly, skeleton-rich and shallow alluvial soils containing diorite
Vinification: Delicate crushing after a short period of contact with the skins, controlled temperature fermentation, half the time in large acacia wooden barrels and the other in stainless steel tanks, no malolactic fermentation, 7 months of lying on fine lees (natural yeast)
Aging Capacity: 6- 8 years
