Schiava

Schiava (Vernatsch), the grape variety most typical of, and most commonly cultivated in South Tyrol, is scarcely grown in the Valle Isarco. The production area, located at the mouth of the valley, north of Balzano, fully meets the needs of this variety, providing the typical Schiava elegance and fruity notes that have made this red wine the most renowned of South Tyrol.

Tasting Notes:
Color: Light ruby to ruby-red.
Bouquet: Pleasant, fruity, characteristic, with fruity and light earthy notes typical of Schiava.
Taste: Light and not very tannic, delicate, harmonious, with pleasant fruit and note of almonds.
Alcohol: 12.5%.
Residual Sugar: 1.9 g/l.
Total Acidity: 4.6 g/l.
Serving Temperature: 12-14º C (53-57º F).
Food Pairings: Appetizers, fowl, cold meats, entrails, speck, soft cheeses.

Vinyard Notes:
Production Area: Chiusa, Velturno.
Elevation: 400-700 meters (1,300-2,300 feet) a.s.l. on a 45% slope.
Exposure: Southeast.
Soil: Hot, fertile, very deep alluvial soils with porphyritic sediment.
Training System: Guyot.
Yield: 70 hl/ha.

Winemaking Notes:
Harvest: Hand picked at the end of September.
Vinification: Traditional maceration on the skins in controlled temperature conditions, malolactic fermentation and aging on fine lees in stainless steel vat.
