Cesanese di Affile, "Capozzano"

The grapes for this wine are harvested by hand and carefully selected in October and subjected to a light rotting. The fermentation occurs in steel vats at a controlled temperature for about 18-20 days, during which there are frequent remontage to allow for the complete extraction of the desired tannins and polyphenols. The aging process starts in new French barriques and ends after 16 months. It follows a further aging in bottles for about 4 months.

Palate: Dry, supple and delicate with a decidedly long finish, wraps around and seduces thanks to a perfect balance

Winemaking Notes:
Vinification: contact with the skins for three weeks; fermentation at a controlled temperature with daily punchdowns. Aging: 80% in French "barriques" and 20% in stainless steel.
