VOLPE
PASINI, PINOT GRIGIO "IPSO"
ZUC
DI VOLPE:
this line represents the zenith of our production. In the "Zuc"
line we want to represent the grapes, the territory and its wines
in their most seductive and stunning rendition. For this line we
select the best grapes for each varietal. We them vinify each type
and each batch individually, selectively adapting the technological
processes to bring out the full character of the raw material. The
resulting wines are the best expression of the varietal characteristics
that the territory and our know how are able to produce. Pinot Grigio
is a variety that was imported from France. The Grapes acquire a
beautiful copper hue as they mature and therefore great care must
be taken during the fermentation process to avoid any skin contact
with the must if a clear straw yellow wine with fauit golden highlights
is desired. The wine has an eminently vinous quality with aromas
that remind you of hay, toasted almonds, and a light nutty tonic
quality. Soft on the palate, gentle of structure and delicately
vibrant, this wine ages gracefully thus amplifying its varietal
characteristics. Our Pinot Pinot Grigio is best served with appetizer,
seafood dishes, and recipes where eggs play a leading role. Best
served at 55° F.
