Vineyards: Southeastern exposure at 600 ft above sea level.
Soil: Medium texture, tending to compact, interspersed with limy tufa
Planting system: Low trained on wire system, spur pruned cordon
Vine density: 2.600 per acre
Harvest: August for the Chardonnay and September for the Insolia
Yield per Hectar: 6000 kilos
Bottles Produced: 20.000
Aging: A couple of months in stainless steel and 12 months in French Oak barrels with an additional 4-6 months in the bottle.
Vinification: the vinification of the chardonnay and insolia grapes is separate and they are blended after the fermentation..
Alcohol: 14%
Tasting Notes: Bidis shows a brilliant golden yellow color and nuances of golden yellow. The nose reveals intense, clean, pleasing and refined aromas starting with hints of apple, orange and almond followed by aromas of toasted, vanilla, pineapple, peach, plum and pear. The mouth has good correspondence to the nose, a crisp attack and pleasing roundness. Good body, intense flavors. The finish is persistent with flavors of apple, almond and orange.
