Vineyard: 500 feet above sea level with a density of 1,800 vine per acre.
Planting System: Spurred Cordon
Soil:. Mainly calcareous clay.
Harvest: Hand picked first 3 weeks October.
Yield: About 2.2 tons per acre
Alcohol: 13.5%
Vinification: Fermented in stainless steel tanks with a 6-8 day maceration with frequent pumpovers at controlled temperature.
Aging: 16 months in new French oak barrels with natural malolactic fermentation and 6 months in the bottle.
Winemaker: Paolo Capriotti

Tasting Notes: Intense ruby red color with purple hues. Shiny and impenetrable. On the nose is intense and broad with notes for cherries, cinnamon, cloves, cocoa and leather. Very powerful in the mouth with good acidity and smooth tannins. A very well balanced wine. Beautiful and elegant now and it can age for several years.
Food Pairings: Braised and roasted meats. Pasta with meaty red sauces.

“The estate’s 2005 Grifola is 100% Montepulciano made from lower yields than the Rosso and aged 16 months in French oak. It is a deep, rich wine with a plush core of sweet, dark fruit that gradually emerges as the wine sits in the glass. This elegant, full-bodied red offers notable elegance and balance, but it needs some air before it shows its true potential. It is an impressive effort from this young property. Anticipated maturity: 2008-2017.
These are the first wines I have tasted from this young estate in the Marche, and they are terrific. I suppose I shouldn’t be too surprised at the quality level since proprietors Paolo Capriotti and Pino Ottavi have enlisted the services of their friend Marco Casolanetti of Oasi Degli Angeli. These beautiful wines made from low yields and aged in French oak are very promising.”
