Vinification: Fermented in stainless steel tanks with a 15-day maceration.
Aging: 18 months in small oak barrels plus 6 months in the bottle

Tasting Notes: Very ripe preserved black berries and some plums on the nose, delicate peppery notes and dried herbs, sweetish roasted and smoky notes. Full-bodied, juicy on the palate with good grip, prominent roasted and slightly sooty oak, medium-fine, still slightly astringent tannins, persistent, noticeable alcohol, mineral notes in the background, firm structure and a fairly prominent bite, astringent oak on the finish.
Food Pairings: Rare and roasted meat, game and mature cheese.
