Training system: Guyot (original planting). New plantings changing to spurred cordon
Vineyard Density: Old 5,500 per acre; new 1.800/2.000 per acre.
Soil: Clay-based, with medium density.
Yield: 3,8 tons per acre.
Harvest: Early October 2006
Vinification: The gently pressed grapes undergo a slow maceration. Fermentation in stainless steel tanks at controlled temperature with pre-fermentative and post-fermentative stages of 20-22 days.
Aging: 10 months in small French oak barrels plus six months in the bottle.
Production: 3.400 bottles.
Alcohol: 13.00% vol
Tasting Notes Saturated purple color in the glass, aromas of freshly crushed blackberries and rose petals. In the mouth notes of black cherries and tobacco with very gentle tannins.
Food Pairings: Braised meats, stews and pasta with tomato sauce.
