The unsual name is a play on 3 “C”s: . The first C represents Cilento, the area in the south of Campania where the wine is produced. The second C represents Cabernet, the varietal used to make the wine and the third C stands for “Chiuse” the small village where the vineyard is located. C to the power of 3. Fortunately, you don’t have to be a mathematician to appreciate this wine.

Production Area: Commune of Acxea (Salerno)
Vineyards: Single vineyard of 4,5 acres 2.7 miles from the Mediterranean, 20 years old, 240 ft above sea level with a vine density of 2.200 per acre, 
Soil: Clayey calcareuos and rocky mix
Planting system: Guyot
Harvest: Early September.
Vinification:  Fermented in large oak barrels for a total of 24 days with frequent daily pump-overs.
Aging: 12 months in used French oak barrels, 12 months in the bottle.
Alcohol: 14.5%
Total bottles produced: 750 ml: 6.000  - 1.500 ml:40

Tasting Notes: Intense extremely dark color. Long on the palate with mix of Mediterranean flavors with nuances of almonds, aroma of black-currant, green pepper and cloves.

Food Pairings: Roast and grilled meats.
