DE CONCILIIS, "Antece"

With this wine Bruno De Conciliis wants to celebrate the old wine making style that has been followed in this area for centuries. The  skins are left are left in the juice during fermentation, like a red wine, than aged in large European oak barrels. This wine is produced only in special years when the grapes are right for it.

Vineyards: South/Southwestern exposure at 300/600 ft above sea level.
Soil: Clayey calcareuos mix

Vine density: 2.400/3300 per acre
Harvest: First half of September
Yield per Hectar: 6000 Kilos (1.3 Kg per plant)
Aging: 12 months in large oak barrels, 12 months in the bottle.
Alcohol: 13.3%
Total bottles produced: 3,500 of 750ml. 250 of 1.5 liters, 50 of 3.0  liters
Vinification: Fermented in stainless steel vats under controlled temperature with a 7 day maceration.

Tasting Notes: This wine is hard to describe. With your eyes closed you might think this is not a white wine.. The elegant fruit on the palate introduces a strong and meaty structure from which emanate warm and soft mineral notes. The finish is very long with elements of fruit followed by an aftertaste of olives and fresh almonds

Food Pairings: Pasta with non-tomato sauces, legumes, vegetable dishes..
