The Dolcetto DOC area covers the provinces of Asti and Cuneo. Traditionally, is the most popular wine among the people of Langhe. Luigi Baudana’s Dolcetto is considered one of the best in the area.

Vineyard: This 1 acre vineyard was planted in 1975 with about 1.800 plants. It is at 1,000 feet above sea level on a western exposure.
Planting System: Guyot
Soil: Predominantly calcareous with medium texture.
Harvest: Middle of September
Yield: 1.5 tons per acre
Alcohol: 13°
Vinification: The grapes, picked by hand using small baskets, are softly pressed. The must ferments in stainless steel tanks for about 5 days under temperature controlled conditions of 28 degree Celsius. After several rackings, the bottling takes place around the middle of May.
Aging: 4 months in stainless steel tanks and 3 months in the bottle.
Total Production: 3.500 bottles
Tasting Notes: Ruby red color. Intense grapey nose with notes of rose petal and fresh fruit. Light tannic and mouth-cleansing sensation on the palate.
Food Pairings: Pasta with red sauces, pork dishes and medium aged cheese.
