STEFANO ACCORDINI, ROSSO DEL VENETO “PASSO”

This wine is the product of an innovative production process with an emphasis to the specific climate of that vintage. Most of the varietals using in this blend is the Corvina Veronese, that gives the wine the power and personality of Amarone. A small addition of Cabernet Sauvignon gives it structure, and a small percentage of Merlot softens it.
The grapes are placed in 30-40 pounds baskets and are left to dry in well ventilated rooms until late November. During this period the grapes start the same noble-rotting process of the Amarone

Varietal Blend: Corvina Veronese 70%, Cabernet Sauvignon 15%, Merlot 15.%,
Vineyard: Located in the hilly region of Negrar, at an elevation of 600 to 750 feet a.s.l. with a south-eastern exposure. Average age of vines: 25 years old. Plant density: 1300 plants per acre.
Planting System: Double Pergola.
Soil: Alluvial.
Harvest: Last week of October.
Yield: About 2.7 tons per acre
Alcohol: 14%
Vinification: Grapes are crushed at the end of November. Fermentation in stainless steel tanks with a 15 days maceration and 2 daily pumpovers. The wine is kept in stainless steel tanks till February. Transferred in barrels by the end of March. Complete malolactic fermentation.
Vintage Notes: The 2005 vintage in Valpolicella was once again strange, with an early Spring and a heat-wave during the months of June and July. August and September had very little sun, low temperatures and a high rainfall. Despite the less than ideal weather conditions, the grape quality was good, thanks to the limited quantity produced, together with a careful selection in the vineyard.
Aging: In new French oak barrels for 12 months and 6 months in the bottle.
Bottle aging potential: At proper temperature, laid down, in the dark, this wine can keep its characteristics for 10- 15 years.

Tasting Notes: The color is intense ruby red with purple hues. Pleasant spicy bouquet with notes of ripe red fruit. The palate is warm, soft and persistent with scent of fruit reminiscing of Amarone.

Pouring Suggestions: Served at 17°- 18° C. Uncork at least 1 hour before drinking.
